‘Marinated’ Tofu & Veggies

Happy Pride! What a better way to celebrate pride with this colourful vegan dish.

And it is als another quick way to get your last-minute proteins up.

What you need (Serves 2)

Tofu Marinade

  • 400g firm tofu (remember it is for the pan)
  • 1 lime
  • 3 spoons sriracha sauce
  • 6 spoons soy sauce
  • 1 spoon sesame oil
  • 1 piece ginger
  • 3 dents garlic

For the pan

  • 4 spoons sunflower oil
  • 1 red bell pepper
  • 1 zuchini
  • 1 eggplant

How you do it

Tofu Marinade / Sauce

Firts of all remember that the tofu will not absorb the marinade. Especially the the firm variants have difficulties as they are not porous enough. However, we will use the marinade as a base for the sauce.

Peel and chop garlic and ginger and place it in a bowl. Squeeze out the lime juice and add. Whisk in sriracha sauce, olive. Afterwards place the Tofu bar for 10 minutes into the marinade

In the pan

Heat up the oil. Meanwhile slice the veggies. Once the oil is hot start roasting the veggies. Withdraw the tofu from the marinade and filter the sauce. Once the veggies turn soft add the tofu and cover with sauce. Keep cooking for 5 more minutes.

Serve and enjoy.
