Fig Marmelade

In the season between summer and fall figs are on their peak moment. The fig season only lasts a few weeks. So you better make sure to you share and if there are some extra left… guess what make some marmelade. And with that enjoy figs outside the season.


What you need

  • 1 kg figs
  • 2 red plums (for jellying)
  • 1 cup sugar
  • 1 cup vodka
  • 5 tbs sherry vinegar


How you do it:


Peel and slice figs. Cut down plums (with skin as it will help you gel the marmelade). Add sugar, vodka, and vinegar. Macerate for 12h.

Start cooking on high temperature. Once the mix starts boiling reduce temperature and cook slowly until it reduces to a marmelade texture.

Fill jars with marmelade while it is still hot. Let cool down for a few hours.

Dig in and enjoy with bread, cheese…etc
