Vegan Bolognese

Bolognese is not for meatlovers only. There is a way of making 100% vegan so that everyone can enjoy thi Itlian delicacy. Check out how… (Be warned you need a pressure cooker for that!)


What you need

  • 2 large aubergines
  • 1 cup chopped red onion
  • 1/2 diced yellow pepper
  • 5 chopped garlic cloves
  • 5 tbs olive oil
  • 1 bay leaves
  • 1 tsp black pepper
  • 2 tbs salt
  • 1 cup white wine
  • 2 cups ground tomato
  • 1 tbs oregano


How you do it:

Heat up the oil in your pressure pot. Add onion, garlic and yellow pepper and start roasting. Roast well. Season with salt, pepper, bay leaves and oregano

Peel and dice aubergines and add to the roast. Cover with white wine and ground tomato. Mix well. Put the lid on your presure pot and cook for 45 minutes.

Allow for the pressure to go back to normal.

Serve with some pasta, vegan cheese and thyme

Dig in and enjoy
