Time for another refreshing soup recipe. This time we go for something French…or American… Well the recipe was crwates by a French chef in an American Hotel/Restaurant. What nationality is it then???
What you need
- 300g leek (white parts)
- 300g potatoes
- 2 fresh onion/shallots (white parts)
- 800ml veggetable stock
- salt & white pepper
- 250ml milk or heavy cream (optional)
How you do it:
Peel and slice/dice al vegetables. Heat up oil in a pot and roast the veggies for a few minutes.
Cover with vegetable stock. Cook for 30 minutes until all veggies are soft. Season with salt and white pepper.
Once the soup is cooled down you can blend it. Filter afterwards and let set for at least 4 hours in the fridge. You can optionally add some milk or cream.
