Yeah, summer is here and we are already approaching 35ºC+. So a good time to take out some refreshing recipes. Gazpacho is the prefect recipe for that. So here a new twist with grilles
What you need
- 3 dents garlic
- 1/2 onion
- 5 tomatoes
- 1 red bell pepper
- 2 cucumbers
- salt & pepper
- olive oil
- Jerez vinegar
How you do it:
Grill tomatoes and red pepper. Peel and remove seed as you see fit.
Peel and dice cucumbers. Place all veggies in a bowl and season with salt, pepper, olive oil and Jerez vinegar. Macerate for 12 hours.
Before blending remove onion and garlic.
Blend all veggies.
Dig in and enjoy
