Have you ever BBQed with a cabbage leave? Neither have I until now. To grill or smoke salmon in a cabbage leaf is a typical Baltic or Russian type of preparation. While the salmon cooks in its juice without drying out, it also gets a chance to absorb some smokey flavours through the leaf.
What you need (2 portions)
- 2 green cabbage leaves
- 2 slices salmon (aprox 150gr each)
- 2 canes cinnamon
- 2 twigs rosemary
- olive oil
- salt & pepper
How you do it:
Steam the cabbage leaves 10 minutes in salty water. Remove from thepot, rinse and let them cool down.
Open up the leaf. Place the salmon slice in the middle. Add cinnamon cane and rosemary. Season with olive oil, salt, and pepper. Fold the leaf over the salmon like a little package and secure with a toothpick.
Repeat all steps with the second cabbage leaf.
Once your BBQ is on the right temperature. Grill the salmon in the cabbage leaf for 25 minutes aprox.
