Christmas time is here! So time for some Christmas baking has come. First up, some delicacies for all celiacs. Gluten free vanilla cookies it is. And it is vegan friendly, too.
- 80g margarine
- 100g sugar
- 1 teaspoon vanilla extract
- dash of salt
- 1 spoon almond milk
- 200g gluten free flour (rice or corn works best)
- 1/2 teaspoon baking soda
- icing sugar for dusting cookies
How you do it
Put all ingredients together and knead until you get a homogenous dough.
Let the dough rest in the fridge for at least 30 minutes
Roll out cake and with a form stamp the cookies
Oven for aprox 10-20 minutes at 180ºC. take the cookies out of the oven and let them cool down. Just before they cool down completely dust the cookies with icing sugar.
