A classic potato pancake or omelette served in almost every Spanish bar. Either served as a side, on bread as a sandwich, or just by itself. This one is gets never boring.
What you need
- 3 large potatoes
- 1 red or ‘Spanish’ onion
- 6 eggs
- salt and pepper
- sunflower or olive oil for frying
How you do it
Start by peeling and dicing the potato. Peel and slice the onion as well.
Heat up oil in a pan and fry the potatoes together with the onion until they are tender an develop a slight golden brown crisp.
Take the fried potatoes and onion out of the oil and let them cool off for a bit. remove the oil from the pan. Leave just a very thin layer of oil on the pan for later.
Whisk the eggs with salt and pepper. Add the fried veggies and mix well. Panfry slowly the tortilla from each side (be careful when flipping the tortilla, you can use a plate to do the flip)
