Halloween time is pumpkin time. So here is a fantastic, easy and vegan recipe to create something very delicious out of your pumpkins.
What you need
- 1 kg pumpkin
- 2 sweet potatoes
- 3 carrots
- 1.5 l chai/rooibos blend tea
- 2 tsp cinnamon
- 1 tbs black salt
- 1 tbs pepper
- 1 tbs paprika
- 1 cup coconut milk
How you do it:
Peel and dice all the veggies. Big chunks are fine.
Add salt and spices and cover with tea.
Cook 35 mins aprox until all veggies are soft
Blend
A coconut milk and mix well.
Dig in and enjoy
