When live gives you lemons…make lemon cake. Probably that is not how the saying goes but who cares. lemon cake is alway a fine delight. And it is easy to make, too.
- 4 eggs
- 150g sugar
- 1 lemon
- 200g margarine
- 250g flour
- 1 spoon baking soda
- 1 spoon vanilla extract
How you do it:
Whisk eggs, sugar and vanilla until you get a foamy texture. Add in slowly the margarine. Make sure the mix stays creamy.
Get from your lemon the zest by rubbing it of and then squeeze out the juice. Whisk those into the mix as well.
Mix flour and baking soda and sieve it into the mix.
Pre-heat the oven to 180ºC. Pour the batter into a baking form. Bake for 45mins aprox.
