Vegan Tajine

Also in confinement like half of the world? Well take advantage of this and take the time to make some more elaborated delicious dishes. I went first for a delicious tajine dish that I had not done in ages. And lets make it vegan and protein rich to stay in shape.

What you need (serves 2)

  • 3 dents garlic
  • 1/2 onion
  • 300g falafel
  • 2 carrots
  • 1 small zucchini
  • 1 tomato
  • 1 cup dried dates
  • 1 cup cooked chickpeas
  • 2 bay leaves
  • 1 spoon harrissé
  • 1 spoon salt
  • 3 spoons olive oil
  • 1/2 spoon sesame oil
  • 1 cup apple juice

How you do it:

Fill your tajine for with water. Put aside for at least 15 mins.

Meanwhile, peel and chop/dice all veggies.

Remove water from the tajine and start heating it up. Add both oils and bay leaves. Stir fry all veggies for 7 minutes. Add falafel and the chickpeas and keep on roasting for a few minutes. Cover with apple juice.

Cover with lid, reduce temperature to a minimum and cook for min 45 minutes

Serve with rice or couscous and enjoy
