Lemon Cinnamon Rice Pudding

Snowy January is in and the temperatures are still low. A perfect moment to stay at home, get cozy, and have something sweet to warm up. So why not some tasty lemon cinnamon rice pudding to get warm?

What you need (for 4 servings)

  • 1 cup rice (small round types, e.g. risotto style)
  • 5 cups milk
  • 1 cinnamon cane
  • 5 spoons honey
  • 1 lemon peel


In a pot heat up the honey. Chop the lemon peel and add it to the honey. Caramelise for a few minutes the lemon peel. Reduce the stove’s temperature. Cover everything with milk. Add the cinnamon cane.
Cook at a low temperature for 10 minutes. Remove the cinnamon cane and add the rice. Rise the stoves temperature just a little bit and and cook the rice pudding slowly.
In aprox 20-30 minutes the rice pudding should be done.

Serve and enjoy.
