Christmas Hazelnut Cookies

Gosh…this time I am quite late to post the first Christmas recipe. It is December 11th and everybody is already in the Christmas rush. So, I guess I get started with the first time. This time we feature a traditional German recipe for typical Christmas cookies or also known as “Plätzchen”.

What you need:

  • 4 egg yolks
  • 125g soft butter
  • 100g sugar
  • 2 spoons vanilla extract
  • 250g flour
  • 75g grounded hazelnuts
  • 75g grounded almonds
  • 1/4 teaspoon baking powder

  • icing sugar and vanilla powder for decoration

How you do it:

Mix al ingredients in a bowl. knead the dough until all ingredients are evenly mixed and you get a homogeneous texture. Wrap the dough in a plastic foil and let it rest for at leat 30 minutes in the fridge.

Take the dough out of the fridge. Roll it out into a thin layer. Use some classic cookie forms to cut the cookies. Oven the cookies at 180ºC for 25 mins aprox.

Once you take out the cookies wait until they tepid. Mix the icing sugar and the vanilla powder and sprinkle it over the cookies.

Serve and enjoy.

Here’s a little exta: Keep the cookies for a few days in an aluminum can or tupperware box. The flavours take a few days to spread through the cookies and will then taste more intense
