Russian Eggs

I assume that these eggs are not actually Russian. In Spain they are quite popular. Especially when you go to one of those Christmas or New Year’s parties where everybody has to bring something.

What you need (serves 6)

  • 6 eggs
  • 1 can tuna (aprox 80-100g)
  • 2 spoons mayonnaise
  • Salt and pepper
  • Parsley for decoration

How you do it:

Boil the eggs. Make sure they are hard-boiled. Cool the down in iced water.

Peel the eggs and cut in half. Remove cautiosly the egg yolks and place them ina bowl.

Add to the yolks tuna (rinse first) and mayonnaise. Season with salt and pepper. Whisk everything together.

With a small spoon fill up the eggs. Make sure the yolk and tuna mix frm a little ball on top.

Serve and enjoy
