Christmas Ginger Cinnamon Cookies

More Christmas cookies are coming. This time I wanted something more spicy and went for some traditional British ginger and cinnamon cookies. And the best( I did not notice until the very end) that those are vegan, too.

What you need (aprox 16 cookies)

  • 220g margarine (vegan please!!!)
  • 350g flour
  • 1 teaspoon baking soda
  • 140 g brown sugar or panela
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • ground cinnamon and icing sugar for dusting the cookies

How you do it:Put all ingredients together and knead until you get a homogenous dough.Let the dough rest in the fridge for at least 30 minutesRoll out cake and with a form stamp the cookiesOven for aprox 10-20 minutes at 180ºC. take the cookies out of the oven and let them cool down. Just before they cool down completely dust the cookies with icing sugar.Serve and enjoy
