Turrón Mousse Cake

While in big parts of the world Christmas time is already over Spain and some other catholic regions are getting ready for assault No. 3: The 3 Wiseman / 3 Reyes Magos. Probably the most valued holiday as in Spain everyone will receive their gifts on this very day.

What you need (serves 6)

Cookie Base

  • 400g cookies
  • 120g butter or margarine


  • 4 spoons milk
  • 50g sugar
  • 400g heavy cream
  • 5g agar agar


  • Caramel Sauce
  • Spanish Turrón or Greek Nougat

How you do it:

Crush cookies. Meanwhile melt butter. Mix both together to get you cookie base. Distribute evenly on the base of your molds or mold. (Use silicone or plastic molds as they will not stick to the cake)

In a pot heat up milk with sugar and 30g of heavy cream. While the milk-mix heats up whip remaining cream and reserve. Once the milk mix starts boiling remove from heat and add agar agar. Stir until the agar agar dissolves completely.

Add the milk mix to the whipped cream and whisk all together. Once you have a homogeneous texture fill up your molds or mold. Chill for at least 2 hours

Just before serving, crush the turrón/nougat. Decorate with caramel sauce and turrón.
