Guiness Cupcakes w. Whisky Frosting

Happy St. Patrick’s Day. Well it is almost here. So what typically irish are we going to do for that day? How about some Guiness cupcakes with Whisky Frosting. What can be more Irisha than those two things

What you need (for aprox 10 cupcakes)

Batter

  • 225g butter
  • 2 eggs
  • 1 cup guiness
  • 400g brown sugar
  • 85g cocoa powder
  • 1 teaspoon salt
  • 1 spoon baking soda
  • 1 spoon vanilla extract
  • 250g flour
  • 150g yoghurt

Frosting

  • 110g butter
  • 500g icing sugar
  • 1 teaspoon salt
  • 3 spoons whiskey
  • 1 spoon milk

How you do it:

Batter

Mix eggs, butter, vanilla and sugar. Creat a mousse-like texture. Then whisk in slowly all the other ingredients. Again the texture must be similar to a thick mousse.

Preheat the oven to 180ºC. Fill the cupcake forms. Bake for aprox 25 minutes.

Frosting

Just whisk all ingredients together in one bowl until you get your creamy frosting texture. Use a piping bag to spread the frosting on top of the cupcakes (make sure that the cupcakes are cooled down, if not the frosting will melt)

Serve and enjoy
