Sweet Cornbread

Although Cornbread is typical from the Southern States of the US (I hope that there is no mistake with that, I actually tasted it first in Boston… and i loved it.
So here is my interpretation of this American Dish.

What you need (for 12 mini breads)

  • 150g butter
  • 125g brown sugar
  • 3 eggs
  • 375g corn flour
  • 1/2 tablespoon baking soda
  • 1 vanilla bean (or 1 spoon vanilla extract)
  • 300 ml milk

 

How you do it:

Mix butter, vanilla and sugar until you get a foamy butter cream (if you are using a vanilla bean make sure to cut it in half end extract the seeds). Whisk in the eggs. Afterwards keep adding slowly the corn flour and milk.

Preheat the oven to 180ÂșC. Spread the batter on a greased baking form. Bake for aprox 30 minutes.

Serve and enjoy
