Lemon Peach Cake

Well right now in Southern Spain it is top season for peaches and lemons. Although the climate is rather dry those two type trees grow the most delicious and juciest fruits. Right the time for some cake.

What you need

  • 1 lemon
  • 2 peaches (if you do not have fresh ones you can also use canned peaches)
  • 80g sugar
  • 200g butter
  • 4 eggs
  • 300g flour
  • 15g baking soda
  • 1 yoghurt

 

How you do it

Dice the peaches and reserve them for later.

Mix and whisk eggs with the sugar and butter until you get a creamy/foamy texture. Keep stiring the cream and add slowly the flour and baking soda. Rub off the lemon peel and squeeze out the juice. Add both ingredients to the mix. Last but not least whisk in the yoghurt.

Preheat the oven to 180°C. Spread the batter into a rectangular cake form. Decorate the top with the peach dices. Oven the cake for aprox 35 mins.

Serve and enjoy!
