Flammkuchen is a typical dish from the Alsace region, the southern border region between France and Germany. The traditional Flammkuchen is anything but vegan as its topping is made with sour cream and bacon. However, you are alowed to change the toppings so here we made some.
What you need
Dough
- 330 g flour
- 80ml water
- 3 spoons sunflower oil
- pinch of salt
Topping 1: Grilled Veggies
- 4 spoons tomato sauce with oregano
- 40g grilled veggies (pepper, zucchini or eggplant)
- 2 spoons chopped chives
- salt and pepper
Topping 2: Pumpkin Cream & Tomato
- 4 spoons pumpkin cream (like this one here)
- 2 small tomatoes
- 2 spoons chopped thyme
- salt and pepper
Topping 3: Olive Oil and Pistaccio
- 2-3 spoons olive oil
- 3 spoons pistaccio
- 2 spoons rosemary
- 1 spoon sugar
How you do it:
Start making the dough by kneading all the ingredients together. Once you have a smooth dough split it in 3 equal parts.
Roll out all three mini doughs into slim stripes. Place them on a baking tray.
Proceed adding the topping described above in the following order: sauce / oil, toppings, herbs and spices.
Bake for 15 mins aprox at 200ºC.
