Vegan Banana Custard

After all this Easter sugar and carb specialties something sweet without guilt: Banana custard. The good thing it the almond milk as well as the banana itself have enough sweeteners so that sugar is not necessary at all.

What you need (for 4 custards)

  • 500ml almond milk
  • 2 spoons corn flour
  • 2 bananas
  • 1 teaspoon vanilla (extract, crystallised, or paste)

How you do it:

Peel and slice the 2 bananas into thick slices. Blend the banana slices with 400ml milk. Afterwards heat up the banan milk mix in a pot.

Take the remaining 100ml milk and whisk it with the corn flour and vanilla.

Once the banana-milk starts boiling remove it from the stove and whisk in the corn-flour milk. Put it back into the stove and keep cooking until the custards starts thickening.

Remove the hot custard from the stove and fill some glasses with the custard. Let cool down for a few hours

Serve and enjoy

    1. The texture is actually very nice and homogeneous. Also, as you do not have any gluten in the flour the texture does not generate any clumps. It actually an easy way of making custard. Thanks for the question šŸ™‚
