As you can see the potato salad in Spain is called “Russian Salad”. And it is not Russian at all. You can find it in almost every Spanish pub, bar, or restaurant as one of the main tapas or starters. And there are thousands and thousand of variations. Here is one.
What you need (serves 4)
- 1/4 onion
- 1/2 red bell pepper
- 2 medium sized carrots
- 5-6 pickles
- 400g small potatoes
- 1/2 cup peas
- 2 cans tuna (aprox 150g)
- 1/2 cup goat milk yoghurt
- 1 spoon mayonnaise
- 2 spoons vinegar
- 1 spoon parsley
- salt and pepper
How you do it:
Cook the potatoes until they are tender (whatever works best, pot, microwave…). Slice the potatoes
Peel and chop all veggies and parseley. Place everything in a bowl. Add the tuna (Make sure it is thoroughly minced)
For the sauce mix the yoghurt, mayonnaise, and vinegar until you have a light cream. Season with salt and pepper. Add to the bowl.
Mix everything carefully and let it set for a 30 mins.
Serve and enjoy
As you day every person and bar in Spain makes their ensaladilla a little bit different. Some add shrimp, artichokes, boiled eggs or canned white asparagus.
The staples are homemade mayonnaise, potatoes, tuna, peas and carrots.
