Christmas time, cookie time. Yes having grown up in Germany practically obliges you to make typical German Christmas cookies.
What you need
- 3 egg yolks
- 350g cold butter
- 200g sugar
- 4 spoons vanilla extract
- 200g grounded almonds (or 100g grounded almonds and 100g grounded hazelnuts)
- 1/4 teaspoon baking soda
- 400g flour
How you do it
Tear the butter into small pieces. As it is cold it will be more difficult to knead the dough if you keep it in one piece. Then add all the other ingredients. You will need some muscle power to knead the dough so be prepared.
The perfect dough must be homogeneous but still a little bit greasy. Corect with flour and butter, if needed.
Once your done form a big ball and wrap the dough in plastic foil. Keep in the fridge for at least 30 mins.
Then spread the dough and use your favourite cookie forms to make the cookies. Oven each batch at 180°C for apro 15-20 mins.
