You got some egg yolks left and don’t know what to do with them? Well here is a very easy, fast, and deli recipe for some coconut oatmeal cookies.
What you need (2 portions)
- 4 eggyolks
- 1 ½ cups brown sugar
- 1 cup butter
- 1 ½ cups flour
- 1 teaspoon salt
- 2 teaspoons vanilla extract
- ½ teaspoon baking soda
- 3 cups oats
- 1 cup coconut flakes
How you do it:
Beat together egg yolks, butter and sugar. whisk in the vanilla and salt. Mix flour, baking soda, oats, and coconut flakes and add them to the first bowl. Knead the dough thoroughly.
Preheat the oven to 180º C.
Divide the dough into 24 equal pieces and form the cookies. Bake them for aprox 15 minutes.
