
Breakfast time. Usually I am a sweettooth in the morning and need my portion of sugar. But today I went for something savoury. Just perfect to get a bunch of proteins into your body and hit the gym.
What you need (2 portions)
- 4 eggs
- 6 slices honey crust ham
- 1 tomato
- ½ small spring onion
- 1 spoon coriander
- 50g feta cheese
- 2 spoons olive oil
- salt and pepper
How you do it:
Chop the onion, tomato, feta, and coriander. Mix everything together and reserve.
In a pan heat up the olive oil. Meanwhile chop the ham. Stir-fry it for 3-4 minutes. Add the eggs (you can add them right to the hot pan and whisk them there or whisk them before). Make sure not to overcook the egg. It must be a little bit gooey for the perfect finish. Add the tomato-feta-onion mix to the egg.
