Looking for something nice and easy for your New Year’s eve Dinner? Well then go for a Spanish classic: Vinaigrette Mussels. It is a very easy dish to make and it looks very fancy and sophisticated. Plus, you can also cheat a lot.
What you need
- 9 steamed mussels (only the halves with the mussel meat, you can either make them yourself or you can buy them pre-boiled/frozen so you just have to unfreeze them. Here is the cheating!!!)
- 1 tomato
- ½ fresh onion
- handful of parsley
- 2 spoons olive oil
- 1 spoon vinegar
- 1 teaspoon honey
- salt, pepper
How you do it
Chop the tomato, onion and parsley and put them in a bowl. Add the olive oil, vinegar, honey, salt and pepper. Mix everything. Put 1 spoon of the mix on top of each mussel. Tadaaa youre done.
Make sure to prepare the mussels a few hours in advance. The mix will macerate the mussels a little bit. With that you will get the best taste.
