Raspberry Caramel Tarte

The summer is almost here and we can notice that in all the shops and markets. Fresh spring time fruit and vegetables are all around so it is time for some deli summer recipes: Just like the following raspberry Caramel Tarte.

What you need:

  • 1 big egg
  • 2 spoons brown sugar
  • 1 teaspoon vanilla extract
  • 3 spoons flour
  • 1/4 teaspoon baking powder
  • 1 spoon cream cheese
  • 1 spoon fresh butter
  • 2 teaspoons caramel
  • 100g raspberries

How you do it:

Stir the egg with the sugar and vanilla extract until you get a very foamy texture (stir for aprox. 15 minutes). Add flour and baking powder and keep stirring until you get a homogeneous texture. Put the batter into a small, round cake form and oven at 180ºC for aprox 15-20 minutes. Let the cake cool down (While baking the cake will grow in the centre a little bit more than on the edges – so take a string or a knife and even the cake out.

Stir the butter lightly. Add the cream cheese and caramel and keep stiring. Keep mixing everything until you get a very light and fluffy cream. Cover the cake with this caramel cream. Decorate afterwards with raspberries.

Put the cake for 20 minutes in the fridge to rest.
