May it be or not. But the summer is just around the corner and friends are asking me for some fresh and summerly recipes. Allright as you wish.
The problem came actually up when I opened the fridge: An octopus, a few vegetables and lentils. Not much to do or what? Well actually yes there is a Galician recipe perfect for those ingredients (For all non-Spaniards Galicia is in the northwest area of Spain and famous for octopus recipes).
What you need:
● 1 boiled and diced octopus (if you have problems cutting the octopus a pair of scissors are quite handy)
● 100g steamed or boiled lentils
● 1 diced tomato
● 1/2 chopped onion
● 1/2 chopped red bell pepper
● handful chopped parsley
● 1 teaspoon spicy chili powder
● 2 spoons olive oil
● 2 spoons sherry vinegar
● salt and pepper
How you do it
Mix everything together in a bowl. Add the chilipowder and olive oil. Stir. Give the salad a personal touch with the vinegar, salt and pepper.
Serve and enjoy
Interesting dish, very intrigued.
