Summer is almost here. So it’s time for so fresh recipes which fit the warm season. Usually you would think of a recipe which does not involve a lot of spices. But is it possible to combine both? Spicy yet fresh? Well Arab styled cuisine can. Check this out.
What you need (for aprox 4 servings)
- 400g chicken
- 1 dents garlic
- 1 small onion
- 1/2 red bell pepper
- 1 tomato
- 200g pickeled olives
- 1/2 lemon
- 6 spoons olive oil
- 1 teaspoon sesame oil
- 1-2 spoons (vary the amount depending on how spicy you want it) harissa spice mix
- 2 spoons salt
- 250ml chicken broth
- 250ml apple juice
How you do it
First you will ne a Tajine (Arab clay casserole). Fill the lower dish with water and let it rest for 10 mins. (The dish need to moisten before cooking – if you do not do this the preparation will not work)
Meanwhile peel and dice all the veggies and the cut down the chicken into small pieces.
Withdraw the water from the lower tajine dish and start heating it up. Add the oils and mix them. Once the oils are hot start roasting the garlic, onion, pepper, and chicken. Add the tomato and olives and season with harissa and salt. Roast for a few more minutes. Meanwhile slice the lemon and distribute the slices within the tajine.
Cover with chicken broth and apple juice and place the lid on top. Let everything cook for aprox 1 hour at a lower temperature.
