Passion Fruit Cake

Do you know that moment when you planned the perfect new year’s eve dinner. You have everything ready, all courses sorted out. But, then you realise….oh my god what shall I serve for dessert? (This has happened to me quite often) So here is the easy and fast to make super fance passion fruit cake.

What you need (for 8 mini cakes)

  • 2 eggs
  • 6 spoons sugar
  • 1 vanilla bean (or 1 spoon vanilla extract)
  • 1 passion fruit (or you can also use 1 peach if you do not have a passion fruit at hand)
  • 6 spoons flour
  • 1 teaspoon baking soda
  • 3 spoon sunflower oil

 

How you do it

Start by mixing eggs, vanilla and sugar. Whip the mix until you get a very fluffy texture. Start adding slowly the flour and baking soda.

Cut open the passion fruit and scrape out the pulp. (if you are using a peach then peel, cut it into smaller pieces and then grind it) Whisk in the pulp with the oil.

Place it into 8 cupcake forms. Oven the mini cakes in a 180ºC pre-heated oven for aprox 15-20 mins.

Serve and enjoy
