Mango-Chicken with Guacamole

Still the winter is on. It is either snowing, cloudy, very cold, or everything altogether. But from time to time there is one of those days filled with sunshine and a clear blue sky giving us hinch of summer feeling. Well on those who cannot resist to go for a more summer-inspired dish? During those days mango-chicken with guacamole is just perfect.

 

What you need:

Mango Chicken

  • 2 cooked chicken breasts (I preferably like to cook them in vegetable broth, but it works anyhow, just don’t forget to not season it too much as it will then dominate the taste)
  • 3 spoons mayonnaise
  • 3 spoons mango puree

 

Guacamole

  • 1 avocado
  • 1 small tomato
  • 1 small dent garlic
  • 10 g coriander
  • 1 spoon diced onion
  • 1 teaspoon vinegar
  • 1 teaspoon lemon juice
  • 1 teaspoon lime juice
  • salt and pepper for seasoning

 

How you do it:

Mango-Chicken

with your hand rip the cooked chicken breasts into small pieces. Add the mayonnaise and the mango puree and mix everything

Guacamole

Prepare the vegetables and fruits (Wash or peel, and cut into pieces). Put the vegetables/fruit into a blender and cover with herbs, seasoning, and juices. Blend very lightly so that you get the typical ‘pastry’ texture but with still with some vegetable/fruit chunks.

 

Serve and enjoy.

 

PS: Serve with some rice (as shown on the picture) or use it for making burritos.
