Guests are coming over in a couple of hours? And you need something fast and easy but yet sophisticated. Well thats just what happened to us a few days ago and these cupcakes were the perfect solution.
What you need:
- 2 eggs
- 1 teaspoon vanilla extract
- 3 spoons brown sugar
- 8 spoons flour
- 1/2 teaspoon baking soda
- 100g dark chocolate
- 20 ml Meyer’s rum
- 20 ml sunflower oil
- 200g creamcheese
- 4 spoons tangerine jam
How you do it:
Cupcakes:
Mix the eggs with the vanilla extract and the brown sugar. Stirr until the mix turns foamy. Add the flour, baking soda and rum (the rum later will enhance the chocolate’s taste). Continue mixing. Melt the dark chocolate and add it also. Finish the batter by adding the oil and stirring the batter until you get a homogeneous batter. Fill the batter into the cupcake-forms and bake them at 185º C for aprox. 15 minutes.
Frosting:
Stirr the creamcheese until it turn into a very creamy texture. Mix the creamcheese with the tangerine jam. When the cupcakes are cooled down top them off with the frosting.
Serve and enjoy

My father had a peach, nectarine, pomegranate, fig (black and green), lemon and lime trees, and a tangerine.Not to forget the avocado tree.
My mother always made jams and jellies. We always enjoyed picking the tangerines from the tree or up off the ground were they fell to eat them. Yummy!!
