Japanese Ramen Soup


Ramen Restaurants seem to be very trendy right now in Barcelona. Well it is nothing strange. The temperatures are going down and everyone is looking for a way to warm-up without having to succumb to greasy and ‘heavy-duty’ meals or dishes.

The ramen is a perfect way during the autmn/winter-season to get a warm, tasty, and nutritious meal into your body. So let’s have a look at the recipe.

Just to inform you the recipe is easy to do but it will take you some time. Also, this recipe features the soy based ramen soup. There are other styles such as the miso based soup. So feel free to check out other recipes.


What you need (for two ramen soups)

  • ½ chicken
  • ½ porridge
  • 5 peeled dents garlic
  • 3 spoons salt
  • 6 spoons Japanese rice vinegar
  • 2 nori sheets
  • water
  • 6 slices of sirloin or tofu (if you like a veggie dish)
  • 4 spoons soy sauce
  • 2 individual packs of ramen noodles
  • 2 eggs
  • chopped chive


How you do it

 Chicken Broth

Put the chicken, porridge, 1 nori and garlic into a pot (Make sure it is a pot that at least can handle 5 litres of volume). Add the salt, vinegar and water until all the ingredients are covered. Start cooking the broth slowly. The broth will be ready in 3-4 hours, so be patiente. Make sure that the broth cooks very, very slowly. Avoid boiling. If you see some foam building up on the surface withdraw it with a spoon as it will alter the soup’s taste. When the broth is done withdraw all solid ingredients as you will only need the broth. If necessary filter. (Keep the solid ingredients to make some other dish)


Sirloin / Tofu

Heat up a pan. Grill the sirloin/tofu slices briefly from both sides (maximum 15 seconds each side). Add the soy sauce and some water and let the sirloin/tofu cook at a low temperature for 1 hour.



Heat up some water. Meanwhile put the noodles in a bowl. Cover with the hot water and wait until the pasta softens. Withdraw the water



Cook the eggs in boiling water. When they are done cool them down with cold water. Peel them and cut them in half.


Building up the soup

First put the noodles in a bowl. Add slowly the hot chicken broth until all noodles are covered. Add the cooked sirloin/tofu, 2 egg halves, nori-stripes, and some chive. Season with some soy sauce.


Serve and enjoy

  1. Looks like soups be on at your place for some time. This as well as the others all look awesome. I like how Japaneses Cuisine always plate the dish with an egg.

    I bought some pumpkin to make Cream of pumpkin soup this afternoon. Then I remembered your Sweet potato Soup using pumpkin and carrots. I will use your recipe, but replace the water with chicken broth and add heavy cream. What do you think? 🙂
