Broccoli Cream Soup

What you need

  • 1 broccoli
  • 1/2 onion
  • 2 spoons olive oil
  • 1 spoon parsley
  • 1 spoon salt
  • 1 spoon grounded pepper
  • 2 spoons cream cheese
  • 3 spoons cream
  • 300 ml water
  • 50 ml milk

How you do it

Dice the broccoli and the onion and put them into a pot. Add the olive oil, spices, parsley and water. Cover the pot and boil everything for 20 – 30 minutes. Blend the mixture until you get a creamy texture. Add the cream and the cream cheese and stir until the cream cheese dissolves completely. At the same time stir the milk until it turns foamy. Serve first the broccoli cream and top it with the milk foam. You will get the best visual effect serving the broccoli cream cappucino in a whiskey glass or other transparent recipient, where you can visualise the two different layers.
